Today, I would like to show you how to select noodle for your recipe. A noodle for Pad Thai, Ka Nom Jeen (Jin), Kao Soi (Chieng Mai Noodle curry), Pad Kee Mow (Spicy Noodle Stir Fried), Pad See-Ew, Kai Kau, Pad Woon Sen, Rad Nar (Big Flat Noodle with gravy sauce), Mee krob, Kauy Tiew Ngam ( Noodle soup), Kauy Tiew Haeng (Noodle salad), Yum Woon Sen, etc.,
2. I saw some restaurant use dried noodle instead of fresh noodle according to their recipe and their inventory. Sometime it is hard to find a fresh noodle in some city and some state of US. Soak dried noodles in a warm tap water until it become soft before cooking.
3. My sister restaurant used this noodle for her Pad Thai recipe. Which was very popular among her customer. They loved it. Some customer drove a long mile to get her Pad Thai dish. It absorbs sauce well. It is more softer than the number one noodle.
4. This is for Pad Se Ew, Pad Kee Mow, Gai kua, Noodle soup and Rad Nar. This can stay for 2-3 days at room temperature. I like to put it in a freezer for later use.
5. Rice Vermicelli Noodle, use for Mee Krob, Noodle soup and Rad Nar
6. Bean Thread Vermicelli Noodle or clear noodle, use for Yum Woon Sen, Pad Woon Sen, Pad Thai, yes! Pad Thai Wood Sen. If someone walk in to your restaurant and ordering Pad Thai Woon Sen. Believe me, they had been visit Thailand before.
7. This can make Chow Mein stir fry recipe, discard the small package which came inside package.
Add meat and vegetable for more nutrition. It's handy.
8. Spaghetti, use for Spaghetti Pad Kee Mow, which most American love it.
9. This is my favorite noodle made in Thailand.
10. This is my favorite Sen Kanom Jin.

11. Fresh Egg Noodle, this one use for Chieng Mai noodle curry, noodle soup, Mee Krob Rad Nar, Shrimp wrap (Kung Sarong), Ba Mee Ped Yang, Ba Mee Moo Dang
All these noodles, I always have for my pantry stock. You may find some of them in local supermarket. Some of them, you will find only at Asia supermarket especially Chinese supermarket and Vietnamese supermarket. I will post for more about noodle in California. I always remix and rematch for something that I don't have in hand. I will show you how next.
