Kanom Jin (Jeen) Noodles;
Some time we called "Thai spaghetti Noodles" in California. It's a rice noodles, which is very good with red curry and green curry. Choice of chicken, pork, fish or yellow beans. In Thailand, we eat Kanom Jin (Jeen) for breakfast, lunch and dinner. It's very popular among Thai. And I am one of them.
In these pictures, I show you how to make in California. After I tried to taste several brands. This is a rice vermicelli brand that I preferred. I boiled it in a slot basket, stirred it right away and occasionally until it became soft. Then soaked it in a tap water. I fold it in my index finger, pressed the water out with other hand. Placed it in the bottom of slot basket and arranged to the top. Set it aside about 10-15 minutes before serving. These pictures I made 2 packs of rice vermicelli. Serves 4-6

Benji' Note: please pay attention when you are boiling it. Don't over cook. I don't see it in Thai restaurant menu. So, you have to do it yourself.
