Wow!! Sweet Sticky Rice with Mango/in season now!




















Hi Thai Foodie!

Now, it's time to enjoy the mango season in California. Sweet sticky rice with mango , these Thai dessert has been waiting for many of Thai foodie since fall. Prices start at $7.95. This recipe is easy to cook at home and enjoy as much as you can eat. If you are looking for recipe for your own kitchen or your own restaurant. I am delight sharing recipe with you all.

Ingredients

2.2 lbs (1kg) sticky rice
2 cans (19oz) coconut milk
6 cups granulated sugar plus a little more if you prefer more sweetness
2 tablespoons salt
2 tablespoons corn flour mix with a little of water

For Coconut sticky rice


  • Soak sticky rice in a large bowl at least 4 hours or over night before steam it.
  • Add sticky rice into bamboo basket, place it on the steam pot with water 2 inch cover at the bottom pot. Steam it about 15-20 minute.




  • While steaming sticky rice on the stove. Add 1 can coconut milk into a deep saucepan over low heat. Follow by 6 cups of granulated sugar plus 1 tablespoon salt into coconut milk saucepan. Keep stirring until granulated sugar and salt has dissolve. As soon as sugar and salt dissolved. Turn off the heat. Remove from the stove. Set aside.



  • As soon as sticky rice looks clear and well cook. Place it in a large mixing bowl, pour the coconut mixture over stream sticky rice. Use a wooden spoon mix it together. Cover the mixing bowl with aluminum foil for 30 minutes. Then spoon over from the bottom up to relish the hot air out.








  • Serve with ripe mango, pour on top with coconut milk mixture for topping and a white sesame seed (optional)







For Topping

  • Add 1 cup of coconut milk into a saucepan over low heat. Add 1 tablespoon of salt into the coconut milk then corn flour mixture with water. Quickly stir it together until the mixture get more thicker. Turn the heat off. Let it cool. Refrigerator for future use. The taste to expect, it should be medium salty.

Benji's Tips:


  • Store sweet sticky rice in a small freezer bag. Place it in the freezer. Take it out, thaw and reheat in microwave for enjoying some other time.

  • It is a balance of sweetness, saltiness with flavoring of coconut milk, a soft texture of sticky rice combine with a sweet tangy mango.
