Thai salad/Som Tum/ how I cook it in California!

Today, my menu gonna be Som Tum (spicy green papaya salad). Som Tum is the most popular dish in Thailand and always be on the top ten selected recipe to present Thai food around the world. What do you can expect to get the taste from this salad. It is a balance of sour, sweet, salty and spicy combine with fresh crispy green papaya, fresh tomato, fresh lime juice, tamarind juice, fresh garlic and fresh green or red chilies. When all ingredients combine together just make Som Tum become phenomenon salad.

I got so many request from my friend, friend's family and customer, they want create their own dish at home and sharing with their family and friends.


Som Tum
(Spicy Green Papaya Salad)
Ingredients
1 medium Mexican dark green papaya
2 tomatoes, cut into wedges
½ cups green beans, cut into bite size
¼ cups dried shrimps or cooked shrimp
2 garlic cloves, crushed
3 Thai green and red chillies, crushed (spiciness can be adjustment by yourself)
½ cups roasted peanut (optional)
1 head of fresh cabbage
Sauce
3 tablespoons Thai fish sauce
3 tablespoons lime juice or tamarind juice
2 tablespoons light brown organic sugar or palm sugar

Preparation
  • Peel the papaya and rinse under water running. Shred the flesh with a grater. Soak in the water for a while. Drain, Set aside.
  • In the mixing bowl, combine the ingredients for papaya sauce. Stir until sugar dissolve. Add the crushed garlic and crushed chilies mix it together.
  • Add the tomatoes, green been, dried shrimps and shred papaya into the mixing bowl and toss it together. Serve cold accompanied by sticky rice and a fresh cabbage.

Cooking Tips
  • Dried chili can be substitute with when you don't have the fresh one.
  • Salty crab may be added if you needed .
  • Dried shrimp can be substitute by cooked shrimp
  • No mortar needed.
